DETERMINATION OF VOLATILE ACIDITY IN WINE – REVISION OF THE METHOD

The GENERAL ASSEMBLY

Considering Article 2 paragraph 2 iv of the Agreement of April 3, 2001 establishing the International Organisation of Vine and Wine,

Upon the proposal of The Sub-commission Methods of Analyses during its session in April 2014

DECIDES: On the proposal of Commission II « Oenology » to modify the method OIV-MA-AS313-02 of the Compendium of International Methods of wines and musts", as follows:

In the sub-paragraphh 5.1 Preparation of sample, the last sentence (written in italics) is added:

  • 5.1 Preparation of sample: elimination of carbon dioxide. Place about 50 mL of wine in a vacuum flask; apply vacuum to the flask with the water pump for one to two minutes while shaking continuously. Other CO2 elimination systems may be used if the CO2 elimination is guaranteed.
