OIV-EONO 673-2021 Update to the monograph on potassium caseinate (COEI-1-POTCAS)
THE GENERAL ASSEMBLY,
IN VIEW OF the Article 2, paragraph 2 b) ii of the Agreement of 3rd April 2001 establishing the International Organisation of Vine and Wine,
CONSIDERING the work of the “Specifications of Oenological Products” Expert group,
DECIDES, at the proposal of Commission II “Oenology”, to update Monograph COEI-1-POTCAS in Chapter I of the International Oenological Codex as follows:
Update to the monograph on potassium caseinate (COEI-1-POTCAS)
Point 4.1, “pH”, is to be modified as follows:
In a water solution with 5 g of potassium caseinate per 100 ml of water, the pH should be between 6.0 and 8.0 0.5.
Point 4.2, “Desiccation loss”, is to be modified as follows:
As determined upon constant weight for a sample of approximately 2 g, weight loss at 100-105 °C should not be greater than 10%.
Point 4.3, “Ash”, is to be modified as follows:
Without exceeding 550 °C, burn the residue from the desiccation loss test. The weight of the ash should not be greater than 7%.
