Now, here are some shocking facts about diabetes. Approximately 537 million adults (20-79 years) are living with diabetes. The total number of people living with diabetes is projected to rise to 643 million by 2030 and 783 million by 2045. Type 2 diabetes used to occur almost entirely among adults, but now occurs in children as well. Many studies have been conducted over the years that show a high carbohydrate, low fat diet can make a positive impact on type 2 diabetes. Walter Kempner, M.D. and will ginger lower blood sugar research scientist from Duke University in North Carolina, discovered that a low fat, high carbohydrate diet could actually heal type 2 diabetes. A study carried out by the University of Kentucky Medical School reported that as many as 50% of the diabetics taking insulin were able to discontinue its use after 2 weeks.
